Seeds contain about 49.6% fat, 22% protein, and about 8.3% carbohydrates. Sunflower seeds are a relatively balanced food rich in the minerals calcium, magnesium, iron, and phosphorus, vitamins E and B1. Sunflower oil contains 4 to 9% palmitic acid, 1 to 7% stearic acid, 14 to 40% oleic acid, and 48 to 74% linoleic acid.
